Launching April 4th, Bistro Saine brings understated sophistication to Albert Street with a French-Mediterranean concept that marries classic techniques with contemporary creativity. Rooted in local provenance and seasonality, their menu features indulgent pastas, signature steak frites, fresh seafood, and inventive shared plates.
At the helm is Executive Chef Yutak Son—French-trained talent with experience at renowned spots like Orphans Kitchen, Sidart, Black Estate, Te Motu, and Daily Bread. His refined approach blends traditional French techniques with local ingredients and modern innovation, driving the creative force behind every dish.
The dedicated team also includes General Manager Joey Hickman, a seasoned hospitality leader with over 20 years of global experience; Restaurant Manager Pierre Guillot, formerly of The Grove, bringing refined service and expertise; Sommelier Pierre Bernardeau—formerly of Michelin-starred Le Gourmet de Sèze—and Bar Manager Harry Huxley from Kemuri Hi-Fi. Together, Bistro Saine offers a refined dining experience in a beautifully restored heritage space that captures the spirit of European brasseries and the vibrancy of modern Auckland.
