Join chef Raymond Xue on a culinary journey across the regions of Shanghai, Beijing and Yangzhou to discover the unique flavours of Chinese cuisine. Having worked in five-star hotels, fine dining restaurants and luxury cruises as well as numerous kitchens across east Asia, chef Raymond now heads up the exquisite Huami, where contemporary styles meets time old traditional recipes. 

Inspired by his travels during his culinary career, Raymond focuses on bold flavours and seasonal ingredients, skillfully combining the best of New Zealand and Asia, and allowing them shine through in dishes that pay homage to native China.  

This 4-course sharing style dinner will present the highlights of his career, featuring his signature Peking duck, a recipe that the Huami team have skillfully mastered, through to modern twists on traditional Chinese cuisine.
