The highly acclaimed, talented Chef, Analiese Gregory is making her way to the city centre this August for a one night only six-course residence at Ahi with renowned chef and personality, Ben Bayly. Ignite your evening with a six-course menu that champions and celebrates Aotearoa’s local and independent producers - from the alpine char of the South Island cooked on an open grill, to the freshest produce sourced from the Ahi garden in Patumahoe.
Kiwi-born chef Analiese Gregory is renowned for her bold career move trading her chef whites in the fast-paced, high end kitchens of the northern hemisphere and Australia for a life with goats, gumboots, hunting and growing in countryside Tasmania, bringing a distinct and innovative approach to cooking and deep respect for nature.
Prior to life in the countryside, Analiese boasts an impressive culinary background that includes working alongside world-renowned chefs at restaurants in England, Morocco, France with Michael Bras, Peter Gilmore from Quay in Sydney and at well-known Hobart establishment Franklin, amassing a wealth of invaluable experience and culinary training. This, married with her passion for diving, fishing and foraging around her new found home in Tasmania makes her dining experiences as interesting as they are unique. Her return to her home country of New Zealand to cook alongside Ben Bayly promises an extraordinary experience.
Gregory's cooking philosophy revolves around showcasing locally sourced, seasonal ingredients and celebrating the rich diversity of flavours that nature provides. She has an uncanny ability to transform humble ingredients into culinary masterpieces, infusing them with her unique style and bold creativity.
