There are approx. 60 rums to choose from, helpfully categorised as fruity, floral, oaky or spiced, with something sure to please even the most discerning palate. While the majority hail from the Caribbean and South America, the list also includes Bayou XO Mardi Gras Edition from Louisiana as well as New Zealand rum Helmsman Spiced.
The Captain’s Bar is a cosy den, where guests can settle into plush chairs and relax beside the roaring fire. It’s the perfect place to enjoy a cocktail experience. Classic cocktails are available on request, as well as house specials Café Corretto, Southern Slipper and White Cloud, to name but a few.
Leo Minelli is from Mendoza in Argentina and was raised on his family’s farm, which prompted a love of fresh produce and flavours, sparking a desire to cook more. He studied at Islas Malvinas University before undertaking a series of Chef positions in South America, including Brazil and Uruquay as well as The Bahamas.
