What is Robata Dining?
Robata, short for robatayaki (炉端焼き), is a traditional Japanese grilling technique that uses binchotan charcoal—renowned for its intense heat and smokeless burn. Over layered grills, chefs baste and turn each dish with care, achieving perfect texture and depth of flavour. At MASU, we elevate this ancient method into an immersive dining event where every seat is part of the theatre.
